  1. Get 2 medium Eggs
  2. Make ready 1 bunch Kale (1 Leaf)
  3. Prepare 5 tbsp Onions (chopped)
  4. Make ready 1 clove Garlic (chopped)
  5. Take 5 Green Olives (sliced)
  6. Take 10 Capers (more or less to taste)
  7. Prepare 3 Anchovies (more or less to taste)
  8. Make ready 6 slice White Cheddar Cheese (sliced thin from a block.. I find this helps keep the scramble together better then shredded cheese)


Steps to make Green Egg Scramble:

  1. Saute onions and garlic in butter for a few minutes and then add kale and olives. Continue to saute until kale is dark green and soft.
  2. Add scrambled eggs (I put milk, pepper, and parsley in the eggs when I scramble them). Cook for a couple of minutes and then add chopped anchovies and capers.
  3. When eggs are just about done put the sliced cheddar cheese on top and cover pan to melt. Then serve.
  4. Note You can add more or less ingredients to taste but don't underestimate the natural saltiness of the olives, capers, and anchovies.
